Orange mint pudding


Orange Mint Pudding //

Ingredients:

- 4 cups water

- 2 tbsp ghee

- 1⁄2 tsp salt

- 1 cup short grain rice

- 2 cups coconut milk

- 3 tbsp coconut sugar

- zest from one medium sized orange

- 2 tbsp arrowroot powder

- 1 tsp ground cinnamon

- 1⁄2 tsp ground cardamom

- 1⁄2 tsp vanilla

- 1⁄2 cup packed fresh mint leaves, minced

Directions:

- In a saucepan, bring water and salt to a boil.

- Add rice, orange zest, and ghee. Simmer until most of the water has boiled off (approx. 25 min).

- Mix the arrowroot powder, cinnamon, cardamom, coconut sugar and vanilla with the coconut milk in a small mixing bowl.

- Add the mixture to the rice.

- Continue to simmer for about 5 minutes until a nice creamy consistency is left.

- Allow the rice cool down.

- Garnish with mint.

- Mix half of the mint into the pudding.
